Any Grain Salad Dressing

Inspired by a recipe for French Barley Salad from The Moosewood Cookbook.

We use this delicious dressing on pretty much all of our grain salads and even some of our lentil salads.

Tasting it on its own it’ll make your mouth pucker, but once the ingredients are marinated in this tangy sauce it’s just absolute deliciousness.

One of the dressings we use this dressing on our Black Rice Salad. Give it a try!

Ingredients

  • 1/2 cup fresh lemon juice (about 3 lemons) or organic bottled lemon juice
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced or smashed with salt
  • 2 teaspoons Dijon mustard
  • 2 tablespoons chopped fresh dill or mint
  • 1/2 teaspoon salt – or more to taste
  • Freshly ground black pepper to taste

Directions

This is so simple. Put everything into a 2 cup measuring cup or small bowl and whisk it up. That's about it.

 

This amount of dressing is good for 1 cup cooked grain or beans plus veggies. Quinoa, Farro, Black Rice, French Dupuy or Beluga Lentils all work well with this dressing.

We use brightly colored veggies in the salads: Peppers, Red Onion, Green Beans, Cremini Mushrooms (I know those aren’t bright, but they are yummy when marinated in this dressing.)
